Corked Wines

While we make every attempt to provide wines of good quality and provenance, we cannot guarantee the personal 'drinkability' for every bottle we sell. It is the industry standard that older wines are purchased "as is" and at the buyer's risk as to the drinkability of the wine. This policy includes "corked" wines (those tainted with TCA and smell of wet cardboard). This wine fault occurred during the cork selection process and is completely out of our control. For the aforementioned reasons, no refund or exchange will be granted.

One of Italy's (and the world's) greatest wines, Brunello di Montalcino is small wine region in southern central Tuscany, producing particularly impressive wines from the Brunello grape, a local strain of Sangiovese.

Wine making starts from the cellar in stainless steel vats that lasts 28-30 days. The fermentation occurs naturally in the days following the harvest. We intervene only when frequent pumping over and délestage are required to cool the wine down. The wines are aged in large Slavonian oak barrels. Once Brunello has completed its 36months ageing period in barrels it is bottled for further more. 

A small production of 8,000-13,000 bottles are made.

Azienda Salvioni is a family property that has grown from the union of wine with hospitality. Originally Umberto Salvioni, who had studied agriculture, chose to make wine so that he could offer it to his friends. His son Giulio decided to extend the range of friendship, creating a winery that could produce a limited number of bottles of absolute excellence.

The first Cerbaiola Brunello was the fruit of the 1985 harvest, to be followed by other remarkable vintages that carried the name of Montalcino and the passion of the Salvioni far further afield. The winery is fully operated by tightness of the entire family. Following his degree in Agriculture, Giulio’s son David joined the family to help with vineyard work and winemaking. More recently, his sister Alessia has completed the team, working alongside her father on marketing, sales and administration.
